My doula friend brought this dish to me in the days after our little girl was born. The recipe is flexible and is easily customized to food allergies or aversions, and for me, it was the perfect breakfast and snack food throughout the early days and weeks. I love this recipe because it’s been passed around for years among the Conscious Birthing community—adapted to each kitchen and palate where it lands. Additions like chia seeds, sliced almonds, different fruit, frozen fruit, more eggs or more butter, and boosting protein with collagen hydrolysate, all work out well for this simple collection of ingredients.
The blueberries can be substituted for 1 1/2 cups chopped strawberries.
