To make the fig foam, Bring figs, water, and sugar to a low boil and let cool.
When mixture has cooled, run it through cheese cloth or a chinois. You will be left with about 12 ounces of fig syrup.
Fold egg whites into syrup. Funnel mixture into chilled CO2 siphon. Place cap tightly onto siphon and charge with C02, then shake vigorously.
Combine first 3 ingredients in the bottom of a mixing glass. Fill with ice and stir 15–20 seconds to chill.
Strain into chilled cocktail glass and garnish. From a CO2 siphon, dispense approximately ¼–½-inch fig foam onto top of drink.
