Hot German Potato Salad


For 6 Person(s)


  • 3 pounds red potatoes, washed and cut into 1-inch chunks
  • 4 slices thick-sliced bacon
  • 1 medium yellow onion, chopped
  • 1/2 cups apple cider vinegar, divided
  • 1/2 cups honey, divided
  • Freshly ground black pepper, to taste
  • Kosher salt, to taste

Hot German Potato Salad Directions

  1. In a large pot, bring salted water to a boil. Place the potatoes into boiling water, cook 10 to 15 minutes (until halfway cooked), drain and set aside.
  2. Fry the bacon in a large skillet. Remove the bacon, leaving the fat in the skillet. Sauté the onion in the bacon fat until translucent.
  3. Add the potatoes and mix to evenly coat. Sauté on medium-high heat until the potatoes start to get a light crust on most sides. Add ¼ cup each of the vinegar and honey to the potatoes, and mix thoroughly.
  4. Chop the bacon, add to the potatoes and mix again. Cover, reduce heat to low and cook for 30 minutes, stirring occasionally.
  5. Uncover the potatoes and stir in half of the remaining vinegar and honey. Add salt and pepper. Taste for sweet-tart balance and add more honey or vinegar, if desired. Cook the potatoes for an additional 5 minutes after adding additional honey or vinegar. Serve hot.
