- 1/4 cups white vinegar
- 1/4 cups sugar
- 1/2 teaspoons salt
- 3 tablespoons water
- 1 small cucumber, quartered and sliced
- 3 red shallots, coarsely sliced
- 1/2 long red chili, chopped
- 1 tablespoons chopped cilantro
Cucumber Relish Directions
- Simmer the vinegar, sugar and salt with the water until the sugar dissolves. Take off of the heat and allow to cool.
- Just before serving, stir in the cucumber, shallot, chili and chopped cilantro.
