Auntie's Pralines (PRAH-LEENS)

  • 1 cups evaporated milk
  • 2 cups sugar
  • 4 tablespoons butter
  • 2 teaspoons vanilla extract
  • 1/2 cups chopped large pecans

Auntie's Pralines (PRAH-LEENS) Directions

  1. Cover a wood table or baking sheet with aluminum foil and spray the foil with nonstick cooking spray.
  2. Add the evaporated milk to a medium saucepan over medium heat. Warming the milk makes it easier for the sugar to dissolve.
  3. After about 5 minutes add the sugar. Cook over medium heat, stirring constantly to prevent sticking. Cook until the mixture begins to thicken and turn a beautiful caramel color.
  4. Drop a tiny ball of the mixture into a cup of ice-cold water. If a ball forms in the water, then the candy is ready.
  5. Add the butter and vanilla and stir until well blended, then add the chopped pecans. Drop the mixture by the spoonful onto the prepared foil.
  6. Cool the candy for about 30 minutes, or longer if it is raining or humid. Enjoy.
