Campfire Queso Fundido with Fireside Tortillas


For 2 Person(s)

For the queso

  • 1 Onion
  • 2 Aurelia Chorizo Sausage Links or other Spanish-Style Sausage, Cut into Thin Slices
  • 8 ounces Dos Lunas Clasico or other Monterey-Jack style cheese, grated

For the tortillas

  • 2 cups Masa Harina
  • 1 1/2 cups Water (bit more if necessary)

Campfire Queso Fundido with Fireside Tortillas Directions

  1. Start the tortillas. In a bowl, mix the masa harina and enough water to make a dough that holds together but is not sticky.
  2. Roll the dough into small balls the size of golf balls. Place plastic wrap or waxed paper on a cutting board, place a ball of dough on top, cover with another sheet of plastic wrap or waxed paper, then squash the dough with the bottom of a heavy skillet—pressing down as hard as you can.
  3. Start the queso fundido. When the fire or coals are hot, place an iron skillet over direct heat. In the meantime, cook the tortillas directly on the grill—flipping often until cooked. Wrap in foil and keep warm.
  4. When the skillet is hot, add the onions and chorizo and sauté until the onions are soft and beginning to brown and sausage is beginning to crisp on the edges. Add the grated cheese and move the skillet over indirect heat.
  5. Stir constantly until the cheese melts.
  6. Serve with the warm tortillas.
