Red Beet Chocolate Cake


For 8 Person(s)


  • 1 3/4 cups flour
  • 1/2 teaspoons salt
  • 3 eggs
  • 1 1/2 cups beets, pureed
  • 1 teaspoons vanilla extract
  • 1 1/2 teaspoons baking soda
  • 1 1/2 cups sugar
  • 1 cups vegetable oil
  • 2 ounces unsweetened chocolate
  • Sprinkle of confectioners’ sugar

Red Beet Chocolate Cake Directions

  1. Preheat the oven to 350°F.
  2. Melt and cool the baking chocolate.
  3. Sift together the flour, baking soda and salt and set aside.
  4. Combine sugar, eggs and oil in a large mixing bowl. Beat with an electric mixer set at medium for 2 minutes. Beat in the beets, cooled chocolate and vanilla. Gradually add the dry ingredients, beating well after each addition.
  5. Pour into a greased 13x9x2” baking pan and bake for 25 minutes or until the cake tests done. Cool the pan on a rack. Once completely cool, sprinkle cake with confectioners’ sugar and serve.
