Grandmother Billy's Fried Chicken

  • 1 whole chicken(s), cut into 10 pieces
  • 1 quart(s) buttermilk
  • 1 teaspoons salt
  • Vegetable oil, for frying
  • 3 cups all-purpose flour
  • 3 tablespoons seasoned salt
  • 2 teaspoons black pepper
  • 2 teaspoons paprika

Grandmother Billy's Fried Chicken Directions

  1. Pour the buttermilk in a large bowl and add 1 t. salt.
  2. Place the chicken in the buttermilk, cover and refrigerate overnight.
  3. Heat 1½ inches of vegetable oil in a large cast-iron skillet with a lid over medium-high heat until a thermometer reads 350°.
  4. Meanwhile, mix the flour, seasoned salt, black pepper and paprika together in a large plastic bag.
  5. Remove the chicken from the buttermilk one piece at a time and place in the bag. Shake to coat it thoroughly, then place it in the hot oil.
  6. Repeat for the first half of the chicken, being sure not to crowd the skillet.
  7. Cover the pan and fry the chicken for 8 minutes. Uncover the pan and turn the chicken. Cover the pan again and cook for another 8 minutes.
  8. Remove the lid and cook for 1 more minute, until the chicken is golden brown.
  9. Test the internal temperature of the chicken using a meat thermometer; desired temperature is 160°.
  10. Remove the chicken and place it on paper towels to drain.
  11. Reheat the oil to 350° and repeat the breading and cooking process for the other half of the chicken.
