Cauliflower Pizza Crust

  • 1 cups prepared cauliflower, packed
  • 1/2 cups arrowroot starch
  • 1/2 cups shredded mozzarella
  • 1/2 cups grated Parmesan
  • 1 medium clove garlic, minced
  • 1 egg
  • 1/4 teaspoons salt
  • fresh cracked pepper

Cauliflower Pizza Crust Directions

  1. Heat the oven to 450°.
  2. Combine the cauliflower, starch, cheeses and garlic and mix well to incorporate completely.
  3. Whisk the egg in a separate bowl then add it to the cauliflower mixture.
  4. Sprinkle salt and pepper evenly over the mixture and mix again.
  5. Carefully spread the mixture onto a baking sheet lined with parchment paper—using your hands to press it together and form a uniformly ¼-inch-thick rectangle or circle.
  6. Slide the parchment paper onto a hot pizza stone or proceed to bake on the baking sheet.
  7. Bake for 14 to 18 minutes, then use a spatula to flip the crust.
  8. Allow it to bake for an additional 5 to 8 minutes.
  9. After the crust is baked, add sauce or pesto, toppings and cheese, as desired, and bake until melted and warmed to preference.
