Our Holiday Pairings: How to Celebrate with Cheese! class is perfectly timed to prepare you to serve cheese like a pro. Throughout the evening we will feature some of our most sought-after Winter seasonal cheeses (both pasteurized and raw), each coupled with its own perfect pairing. We will discuss plating techniques and serving suggestions, give y'all hints for selecting tasty pairings, chat about holiday recipe cheeses, and delve into the stories behind these cheeses we wait all year for! As always, the goodies will be accompanied by olives, nuts, and Easy Tiger bread.

During the Lighting of the Square on November 24th, revelers join Mayor Dale Ross and Santa in the countdown as they flip the switch on thousands of lights across the “Most Beautiful Town Square in Texas” at 5:30pm. The Austin Carolers will perform classic holiday songs and Santa will be on-site for photos. Event attendees can enjoy hot chocolate and cookies and merchants remain open later than usual. The Downtown holiday lights will remain on after the lighting through New Year’s Day.

The class will be BYOB, with bottles available for purchase in our shop, or you can bring your favorite bubbly wine to class. We will guide you through a tasting of all seven cheeses, in many different styles, all accompanied by nuts and Easy Tiger bread for palate cleansers. We'll also bring out a number of additional pairings like strawberry jam, dark chocolate, or honeycomb, depending on that evening's cheese selection.
