Cover pork with water and simmer for 30 minutes in a covered skillet or electric skillet set at 325°.
Saute onion and celery in butter in a saucepan until soft and add rest of ingredients. Mix over low heat until combined.
Combine pork with sauce in covered, ovenproof casserole dish or skillet and cook in moderate (pre-heated 350°) oven for two hours or until very tender.
Serve on rice or noodles.
