Creamy Carrot Coconut Shooters

  • 3 cups fresh carrot juice
  • 1 small ripe avocado
  • 2 tablespoons agave nectar
  • 1 tablespoons minced ginger
  • 1/4 teaspoons cayenne pepper
  • 1/4 teaspoons sea salt
  • 1/3 cups young Thai coconut meat, cut into 1 inch x ½ inch strips
  • Avocado, lime or orange oil for garnish
  • Cilantro sprigs for garnish
  • 10 shot glasses

Creamy Carrot Coconut Shooters Directions

  1. In a blender, puree the first 6 ingredients until completely smooth. Taste for seasoning.
  2. Pour into shot glasses and serve.
