Grind the spices together in spice grinder, and season the meat mixture with spices, sugar and salt before grinding the meat.
Put the meat through a grinder with a medium die and mix together by hand for no more than 1 minute.
Chill the meat for at least 1 hour.
Roll the sausage mixture into 4 oz. patties and sauté at medium high heat, about 2 minutes, until golden brown and delicious.
Flip the patties and put in a 375° oven for 5 minutes to finish. For the more adventurous, case the sausage mixture to grill, smoke or roast.
