Barbara's Oat Crackers

Recipe and Photography Courtesy of Jim Long

My mother-in-law gave me this recipe decades ago, and I’ve made it for parties and events at my house many times. These crackers freeze well if you want to make them in advance—just let them thaw to room temperature and heat slightly before serving.

Barbara's Oat Crackers

For 1 Person(s)

  • 1 cups organic flour
  • 1 tablespoons sugar
  • 1 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1 teaspoons fresh thyme leaves (or ½ t. dry)
  • 1/2 cups butter, softened
  • 2 cups quick rolled oats (or regular rolled oats chopped in a food processor for 30 seconds)
  • 1/2 cups milk

Barbara's Oat Crackers Directions

  1. Combine the first 6 ingredients in a food processor and blend, then add the oats and milk.
  2. Pulse ingredients to mix again, then roll the dough into a ball, cover with plastic wrap and rest for 30 minutes.
  3. Preheat oven to 375°.
  4. Roll out the dough on a floured surface to 1/8-inch thick, or thinner, and cut into cracker-size pieces. Place on a baking sheet and prick each cracker with a fork several times.
  5. Bake 12 to 15 minutes until lightly browned. When cooled, sprinkle with sea salt and store in an airtight container. Makes several dozen crackers, depending on the size of the pieces.
