Loquat Cobbler

  • 3 cups peeled loquats
  • 1 cups sugar
  • 12 teaspoons butter
  • 1 cups sugar
  • 1/4 teaspoons baking powder
  • 3/4 cups flour
  • 3/4 cups milk

Loquat Cobbler Directions

  1. In a bowl, combine the loquats and the sugar, and set aside.
  2. Line a 12 count muffin tin with baking cups (because the cobbler will stick). Put 1 teaspoon butter into each cup. Place the muffin tin into the oven and set the oven to 350°.
  3. While the oven is heating, mix the next four ingredients in a blender. The mixture will be thin. Remove muffin tin from the oven. Pour blender mixture into each of the muffin liners. Spoon the loquats on last.
  4. Cook for about 45 minutes, letting them get good and brown.
