Miso and Hemp Meatballs with Greens


For 4 Person(s)


  • 1 pounds ground beef
  • 2 tablespoons fresh ginger, minced to a paste
  • 3 garlic cloves, minced
  • 3 tablespoons barley miso
  • 3 tablespoons raw hemp seeds
  • 1 egg, slightly beaten
  • 1 teaspoons toasted sesame oil
  • 1 bunch greens (collards, mustard, bok choy or a combination)
  • Oil for sautéeing
  • Salt and pepper, to taste

Miso and Hemp Meatballs with Greens Directions

  1. In a large bowl, combine the beef, ginger, garlic, miso, hemp seeds, egg and toasted sesame oil. Mix with your hands to thoroughly combine.
  2. Heat a small amount of cooking oil in a skillet to medium high and fry a small amount of the mixture. Taste for seasoning and add salt and pepper, if necessary.
  3. Scoop tablespoon-size portions of the meat mixture and form into meatballs. Heat more of the cooking oil in the skillet and fry the meatballs in batches until cooked through. Remove to a plate and set aside.
  4. In the same skillet, heat more oil if needed and sauté the greens until wilted. Return the meatballs to the pan and heat all together briefly. Serve with steamed rice or warm flatbread.
