In Colombia, there are almost endless ways to make this delicately flavored infusion. Our favorite, of course, is the one that uses fruit peels and leftover pieces rather than whole, fresh fruit.
Place approximately 1 cup of any combination of the following into a small pot: apple peels, orange peels, berries, lemon peels, mint. Cover with 2 cups boiling water and allow to steep for 10–15 minutes.
Ladle into individual mugs, sweeten as desired and serve warm.
