Beach Blanket Fish Fry


For 4 Person(s)


  • gulf black drum fillets (about 5 oz. each)
  • 1 gallons peanut oil
  • 1 cups self-rising flour (plus more for dredging)
  • 1 teaspoons mustard powder
  • 1 teaspoons baking soda
  • 1 teaspoons salt
  • 1 teaspoons mixed dried herbs
  • 1 1/2 tablespoons sugar
  • ounces lager beer (enough to produce a batter consistency)

Beach Blanket Fish Fry Directions

  1. In a large fryer, heat the oil to 375° (we used an outdoor fryer).
  2. Make the batter by combining the flour, mustard powder, baking soda, salt, herbs, sugar and beer in a large bowl.
  3. Dredge the fish fillets in flour before dipping into the batter mix.
  4. Carefully drop the fish into oil and cook until golden brownapproximately 3 to 4 minutes.
  5. Drain on paper towels and serve.
