Tempura-Style Batter


For 1 Batch(es)


  • 1 cups all-purpose flour
  • 1 tablespoons cornstarch
  • 1 1/2 cups ice-cold sparkling mineral water
  • 1 teaspoons kosher salt

Tempura-Style Batter Directions

  1. Combine all ingredients and whisk to blend, but don’t overmix; a few small lumps are okay.
  2. Make the batter just before frying the food.
  3. Pat the food completely dry, then dip into the batter—coating well—and add to oil heated to 360°.
  4. Cook for 2 minutes, then drain on a wire rack set over a baking sheet.
