Roasted Potatoes with Lemon and Oregano


For 1 Batch(es)


  • 1 pounds fingerling potatoes, parboiled for 5 minutes, cooled to room temperature, and cut in half lengthwise
  • 4 tablespoons olive oil
  • salt and pepper, to taste
  • 4 tablespoons chopped oregano
  • 1 1/2 meyer lemons, cut in half crosswise
  • 6 cloves garlic, unpeeled, smashed

Roasted Potatoes with Lemon and Oregano Directions

  1. Preheat the oven to 400°.
  2. Place the potatoes in a mixing bowl and toss with olive oil, salt, pepper and oregano.
  3. Place in a single layer in a roasting pan, and add the lemon halves (cut-side down) and garlic cloves.
  4. Roast until the potatoes begin to brown and turn tender. Remove from the oven and place the potatoes on a serving platter.
  5. Squeeze the roasted garlic and caramelized lemons over the potatoes and mix well. Serve immediately.
