Tempura-Style Batter

Makes enough for 1 lb. of food

Super easy

1 cups all-purpose flour
1 tablespoons cornstarch
1 1/2 cups ice-cold sparkling mineral water
1 teaspoons kosher salt

Tempura-Style Batter Directions

Combine all ingredients and whisk to blend, but don’t overmix; a few small lumps are okay.

Make the batter just before frying the food.

Pat the food completely dry, then dip into the batter—coating well—and add to oil heated to 360°.

Cook for 2 minutes, then drain on a wire rack set over a baking sheet.
