One of the easiest ways to incorporate mesquite meal into your menu is by baking. Mesquite meal is sweet and perfect for pancakes, cookies, cakes and quick breads.
Super easy
3/4 cups xcornmeal
3/4 cups flour
1/2 cups mesquite meal*
2 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoons salt
1/2 cups whole-milk yogurt
1/2 cups milk
1 egg
4 tablespoons honey
4 tablespoons vegetable oil
3/4 cups corn kernels
Mesquite Corn Bread Directions
Preheat oven to 350º and grease an 8-inch square baking pan.
Combine the dry ingredients in a mixing bowl.
In another bowl, blend the wet ingredients together, and add to the dry ingredients. Stir until combined. Fold in the corn kernels.
Pour into the baking pan and bake 20 to 25 minutes, until golden brown.
