Cucumber and dill make a delicious combination, but in Central Texas, their growing seasons barely overlap. Fortunately, dill freezes beautifully and tastes great when used later.
Super easy
Cucumbers
2 teaspoons white wine vinegar
2 teaspoons Dijon mustard
1/2 teaspoons salt
1 1/2 teaspoons sugar
1 tablespoons Texas olive oil
2 tablespoons chopped dill
Lemon thyme, for garnish
Cucumber Salad Directions
Thinly slice the cucumbers with a mandolin or sharp knife.
Whisk the remaining ingredients together.
Toss the cucumbers with the dressing and serve with freshly chopped lemon thyme or other herbs from the garden.
