Red Beet Chocolate Cake

1 3/4 cups flour
1/2 teaspoons salt
3 eggs
1 1/2 cups beets, pureed
1 teaspoons vanilla extract
1 1/2 teaspoons baking soda
1 1/2 cups sugar
1 cups vegetable oil
2 ounces unsweetened chocolate
Sprinkle of confectioners’ sugar

Red Beet Chocolate Cake Directions

Preheat the oven to 350°F.

Melt and cool the baking chocolate.

Sift together the flour, baking soda and salt and set aside.

Combine sugar, eggs and oil in a large mixing bowl. Beat with an electric mixer set at medium for 2 minutes. Beat in the beets, cooled chocolate and vanilla. Gradually add the dry ingredients, beating well after each addition.

Pour into a greased 13x9x2” baking pan and bake for 25 minutes or until the cake tests done. Cool the pan on a rack. Once completely cool, sprinkle cake with confectioners’ sugar and serve.
