Avocado with Sauteed Mushrooms

RECIPE

Serves 4

1 jalapeño pepper, chopped with seeds removed
1⁄4 small red onion, chopped
1 c. of your favorite fresh mushrooms
1 T. olive oil
Salt and pepper
1 large avocado
Cilantro
Parmesan cheese

PREPARATION

Sauté peppers, onion and mushrooms in olive oil. Add salt and pepper to taste. Cut avocado in half and place on a plate. Leave it unpeeled to keep it in place. Top the avocado with mushrooms. Add cilantro and parmesan cheese to taste.
