4 large beets, chopped
1 large carrot, grated
2 cloves garlic, chopped
1 tablespoons ginger, chopped
3 cups water
1 Lemon juice to taste
1 Salt and pepper to taste
1 Orange segments, red onion, mint (garnish)

Beet Soup Directions

Add beets, carrots, garlic, ginger and water to sauce pan and simmer until all is soft.

Puree in blender.

Add lemon juice, salt and pepper to taste.

Garnish with orange segments, red onion and mint.
