
Chile “Petin” Vinegar

Ingredients
- 1 1/2 cups white-wine vinegar
- 1/4 cup(s) chopped chile pequin peppers
- 1 clove(s) garlic, sliced
- 3 tablespoons vodka
Instructions
- Combine all ingredients in a glass jar or cruet and age for a couple of weeks before using.
Notes
This condiment is ubiquitous in older households anywhere south of I-10, and is used to dress just about everything, but especially cooked greens. The addition of vodka is a micro-regional variation. Chile pequin is commonly referred to as “chile petin,” a mishmash probably derived from “chiltepin,” the native wild chile of the region.
