
Classic Garlic Aioli

Ingredients
- 4 egg yolks
- 6 cloves garlic, minced or grated
- 1 cup(s) Texas olive oil
- 1 ounce(s) lemon juice
- Water
- Maldon sea salt, to taste
Instructions
- In a bowl, whisk together the yolks and the garlic.
- Slowly whisk in the olive oil—adding a tiny bit of water if it starts to get too thick.
- Slowly whisk in a steady stream of lemon juice and continue to whisk until the aioli has thickened and emulsified. Add salt, to taste.
Notes
Aioli is a time-honored dip and spread—it’s especially good slathered on a juicy burger or served alongside crispy-fried vegetables for dipping.
