Coconut Milk Horchata

Ingredients
  

  • 1/2 cup(s) sliced almonds, lightly toasted
  • 1/4 cup(s) white rice
  • 1/4 teaspoon(s) ground cinnamon
  • 1 1/2 cups hot water
  • 1/2 cup(s) sugar
  • 1 13 ounce can(s) coconut milk
  • 1/2 teaspoon(s) vanilla extract
  • cinnamon stick, for garnish

Instructions
 

  • Combine the almonds, rice and cinnamon in a blender and process until very fine.
  • Add the hot water, cover, and allow to soak, unrefrigerated, overnight or for approximately 8 hours.
  • Add the sugar, coconut milk and vanilla, blend again and pour through a fine sieve or cheesecloth. Chill the horchata, then serve over ice and garnish with a cinnamon stick.
