2 cups cracked wheat (bulgur wheat)
3 cups water
3 tablespoons salt (kosher or sea)
1 lime, juiced
3 firm peaches, pits removed, skinned & small diced
1 cups extra virgin olive oil
3 small red spring onions (or ½ medium onion), small diced
1/2 Serrano chile, sliced into thin rounds
3 tablespoons mint, chopped
3 tablespoons cilantro, chopped
Cracked Wheat & Peach Salad with Fresh Mint, Chiles & Lime Directions
Bring water and salt to a boil in a pot. Add cracked wheat, cover with a tight fitting lid and let sit for 15 minutes until water is absorbed. Cracked wheat should be tender but not mushy. Transfer to a large bowl and toss with lime juice while still warm.
Warm olive oil over medium heat in a skillet until shimmering. Add onions and sweat until soft, about 10 minutes. Add peaches and toss to combine. Remove from heat and fold in chiles, mint & cilantro.
Add peach mix into the cracked wheat and toss to combine. Drizzle with more olive oil and season with salt & pepper to taste.
