2 cups cilantro
2 poblano peppers, roasted, peeled and seeded
3 garlic cloves
1 cups chicken or vegetable broth
1 bunch green onions, chopped
Olive oil or butter
Sour cream
Creamy Cilantro Sauce for Pasta, Fish or Fowl Directions
In a food processor or blender, puree the cilantro, poblanos, garlic and broth.
Sauté green onions in olive oil or butter, add the cilantro puree and heat just a few minutes.
Thicken with a dollop of sour cream, if desired.
