Super easy
2 English cucumber(s), unpeeled, sliced very thin
1 tablespoons coarse kosher salt
1/2 cups distilled white vinegar
1/4 cups finely chopped fresh dill
2 tablespoons sugar, or to taste
1/2 teaspoons freshly ground black pepper
1 small onion, sliced thin
Cucumber Salad Directions
Place the cucumber slices in a colander in the sink.
Sprinkle with the salt and toss to coat.
Let the cucumbers stand for 15 minutes, stirring occasionally.
Meanwhile, make the dressing by stirring together the vinegar, dill, sugar and pepper in a large bowl until the sugar is dissolved.
Drain the cucumbers well and pat dry.
Add the cucumbers and the onion to the dressing and stir to blend.
Refrigerate for at least 30 minutes, or, even better, overnight. Serve cold.
