3 tablespoons butter
1 1/2 pounds beef stew meat, cut into 1-inch cubes
5 cups sliced onions
3 tablespoons flour
2 tablespoons paprika
3 1/2 cups red bell pepper, cut into 1-inch chunks
1 28 oz. can diced tomatoes
1 1/2 teaspoons salt
1/4 teaspoons pepper
3 cups beef broth
Goulash Soup Directions
Melt the butter in a large pan. Add the meat and cook until brown. Add the onions and cook on medium heat for about 30 minutes, until onions are brown.
Sprinkle in flour and paprika. Stir until moistened.
Add remaining ingredients and bring to a boil. Cover, reduce heat to low and simmer a couple of hours, until meat is very tender.
