Jack Gilmore's Everything-We-Need-Right-Here Carnitas

Easy

4 pounds (or more) pork butt, cut into 2-in. chunks, excess fat removed
1 large yellow onion, roughly chopped
1 cups orange juice
1/2 cups pineapple juice
4 (or more) dried ancho chiles
1 bottle of your favorite Mexican beer
1 tablespoons kosher salt
1 tablespoons black pepper
10 garlic cloves

Jack Gilmore's Everything-We-Need-Right-Here Carnitas Directions

Mix all ingredients well in a large mixing bowl.

Transfer to a large Dutch oven, cover and cook on a medium fire (directly on the coals) for approximately 4 hours.
