Super easy
1 pounds ground chicken
1/2 cups lime juice
2 tablespoons fish sauce
1/2 teaspoons minced fresh ginger
6 shallots, finely chopped
1 cups chopped scallions
1/2 cups chopped cilantro leaves
15 mint leaves
2 tablespoons roasted rice powder
Lettuce or endive leaves, for serving
Larb Gai Directions
To make roasted rice powder, dry roast uncooked rice in a small skillet until golden, then pulverize to a fine powder in a spice grinder. (It can also be found in Thai grocery stores and online.)
Sauté the ground chicken, lime juice, fish sauce, ginger and shallots in a large skillet over medium-high heat until the chicken is cooked through.
Toss with the remaining ingredients and serve cool or at room temperature with butter lettuce or endive leaves.
