Mo' Better Than Pimento Cheese Spread

1 batch makes about 6 cups.

Super easy

1/2 red onion, finely chopped
2 garlic cloves, minced
1 pounds extra-sharp Cheddar cheese (or sharp, if preferred), grated
1/2 pounds Monterrey Jack cheese, grated (for creaminess)
1 cups , heaping, Coloful Autumn Pepper Medley, drained and chopped
3 tablespoons (or more) marinade from above peppers
3 tablespoons (or more) good quality mayonnaise
1/2 teaspoons paprika
chopped jalapeños or serranos to taste (optional)
1/4 teaspoons (or more) crushed cayenne (optional)
1/4 teaspoons (or more) smoked paprika (optional)
1 bunch green onions, with tops, chopped (optional)
3 tablespoons crisp, crumbled bacon (optional)

Mo' Better Than Pimento Cheese Spread Directions

Using a fork, mix the ingredients together in a large bowl. Add only enough mayonnaise to bind the ingredients. Add more peppers or marinade, if needed. Do not over-blend! Texture is vital.
