Pickled Sweet Onions

Super easy

2 sweet onions, thinly sliced
1 1/2 teaspoons salt
1 1/2 cups white vinegar
1/2 cups water
1/4 cups sugar
1/2 teaspoons crushed red pepper
1 bay leaf

Pickled Sweet Onions Directions

In a large mixing bowl, toss the onions with the salt. Let the salted onions sit at room temperature for 30 minutes.

Meanwhile, add the remaining ingredients to a medium saucepan and bring to a boil over medium heat. Pour the hot liquid over the onions and allow to cool to room temperature.

Cover the onions and refrigerate for 24 hours before using. The longer the onions are allowed to sit in the brine, the more the flavor will develop.
