Super easy

1 pounds carrots, roughly grated
1/2 tablespoons cinnamon
2 cloves garlic, crushed
1/4 tablespoons ground ginger
1/4 teaspoons cayenne
1/4 cups olive oil
1 tablespoons lemon juice
1/2 tablespoons salt, or to taste
Pepper to taste

Ruby Dee Philippa's Mo' Rockin' Carrot Spread Directions

Boil the carrots in salted water until soft, about 10 to 15 minutes, then puree in a food processor.

Place the carrots in a bowl with the remaining ingredients and mix well. Check seasonings, adjust to taste and refrigerate. Serve with crackers, or as a sandwich spread.
