Super easy
For the salsa:
1 medium to large mango, peeled and diced
Roma tomatoes, diced
1/4 cups chopped red onion
1/4 cups chopped fresh cilantro
medium jalapenos, finely chopped
1 tablespoons fresh lime juice
For the snapper:
2 medium to large snapper fillets, skin on, washed and patted dry
Olive oil
Salt and pepper, to taste
Snapper Fillets with Mango Salsa Directions
Make the salsa: Mix all of the salsa ingredients together in a medium bowl, cover and chill at least 20 to 30 minutes.Serve on top or alongside the hot grilled snapper.
Make the snapper: Place the snapper fillets in foil and lightly coat each side of the fillets with olive oil, salt and pepper.
Grill on medium heat for 20 minutes until cooked through (the fish should be white and flaky).
