Super easy
1 Pint(s) ripe cherry tomatoes, halved (a mix of colors is best)
1 English cucumber(s), cut into 1/2-inch-thick rounds
1 Quart(s) diced watermelon
1 tablespoons chopped fresh dill
1/2 cups julienned red onion
Extra virgin olive oil
Red wine vinegar
Kosher salt, to taste
Black pepper, to taste
Sugar, to taste
Summer Tomato, Cucumber and Watermelon Salad Directions
Drizzle the tomatoes with some olive oil, sprinkle with salt and allow to marinate for 10 minutes.
Combine the tomatoes with the cucumber, watermelon, dill and onion and gently stir.
Season to taste with salt and pepper, a drizzle of olive oil and a splash of vinegar.
Add a sprinkle of sugar to round out the acidity of the vinegar.
Serve cold or at room temperature.
