4 potatoes (russet potatoes are the best)

Ultimate French Fries Directions
Hand-cut the potatoes to about 1/2-inch in thickness.
Rinse the cut potatoes in a colander under running water, then pat them very dry.
Precook the fies in batches in 275° oil just until they begin to color–about 10 minutes.
Carefully drain them as they are fragile and prone to breaking.
At this point, the fries can be refrigerated or even frozen (but thaw before second frying) if desired. If not refrigerated or freezing, let the fries cool a bit after the first frying, then just before serving, raise the temperature of the cooking oil to 375° and cook the fries again until deep golden brown.
Drain well, sprinkle with salt and serve.
