
Seafood Dipping Sauce

Ingredients
- 8 fresh Thai chilies, minced
- 8 cloves garlic, minced
- 6 tablespoons fish sauce
- 1/2 cup(s) lime juice
- 2 teaspoons sugar
- 2 teaspoons honey
Instructions
- Using a mortar and pestle, crush the chilies and garlic into a coarse paste.
- Add the fish sauce, lime juice, sugar and honey.
- Alternatively, you could put all of the ingredients into a food processor or blender and blend for about 10 seconds.
- Will last in the refrigerator for about a week.
Notes
Chef Sanitchat uses this condiment mainly as a dipping sauce for seafood of all kinds, but she also uses it as a dressing for a grilled beef salad.
