fresh Thai chilies, minced

cloves
garlic, minced

tablespoons
fish sauce
1/2
cup(s) lime juice
2
teaspoons
sugar
2
teaspoons
honey
Instructions
Using a mortar and pestle, crush the chilies and garlic into a coarse paste.
Add the fish sauce, lime juice, sugar and honey.
Alternatively, you could put all of the ingredients into a food processor or blender and blend for about 10 seconds.
Will last in the refrigerator for about a week.
Notes
Chef Sanitchat uses this condiment mainly as a dipping sauce for seafood of all kinds, but she also uses it as a dressing for a grilled beef salad.
