This take on a holiday side would go great with any big holiday dinner with family and friends. I began by thinking back to big bowls of fruit salad that found their way onto every holiday table in my family. It also includes another personal favorite of mine from Thanksgiving—the cranberry sauce or relish. This dish is visually stunning, with deep purple carrots and ripe pears poached in beet juice. The tart incorporates a fun ingredient from the brewery: honey malt, named for the level of toasting the grain reaches during the malting process, which has a similar taste to honey.
