Rum Infused with Mango, Lime and Mint

Ingredients
  

  • 1 ripe mango, peeled, sliced
  • Peel from 2 large limes
  • 5 fresh mint sprigs
  • 750 ml. light rum

Instructions
 

  • Place the mango slices, lime peel and mint in a bottle or jar and fill with rum.
  • Place in a cool, dark place for at least 2 weeks before refrigerating.
  • Mango and lemon peels can be left in without adversely affecting the flavor, but the mint should be taken out if the infusion is going to be stored longer than 2 to 3 weeks.
